Our Premier Cru Champagnes are made in the Vallée de la Marne in the beautiful little village of Avenay Val d’Or. The sustainably managed Premier Cru vineyards offer the perfect conditions for growing first-class grapes: the climate in Champagne allows the grapes to reach their full maturity potential, which in turn brings out the freshness and finesse of the luxurious champagnes from De Watère.

At the heart of De Watère stands that we turned the accepted production approach on its head. Instead of forcing the grape in a pre-defined flavour profile, we ask the grape what it needs to realise its full potential.Following this respectful approach, we employ manual labour as much as possible during the entire production process. From horses in the vineyard instead of heavy emission-emitting tractors, over manual rattling and disgorgement to even having our gift boxes crafted by hand. Yes, also in our partners we look for the same passion for respectful crafting instead of anonymous mass production.
The same traditional methods are used in the production of De Watère Champagnes today as they were before the brutal Industrial Revolution. Wherever possible, the work is done manually. The grapes are picked by hand and the vineyards are plowed with the help of horses instead of heavy tractors. This is gentler on the sensitive soil and avoids the emission of toxins. This approach not only benefits the soil, but above all the quality and purity of the grapes.

Constantly in pursuit of the true soul of Champagne, we hand make limited production Premier Cru Champagnes from the Cuvée of pure grapes that are as close as possible to what Champagnes embodied when they became world famous: before the anonymous industrial mass production.
One key aspect is our respect for our Champagnes. We give them all the time they need to develop in 2,000 year-old caves under the hills of the Vallée de la Marne - until they're ready to show the world what the mythical idea of Champagne tastes like.
